Red Fruit Roll with White Chocolate

Wrapped treats are always a hit; bake this fluffy snow roll filled with a delicious and smooth white chocolate frosting, complemented by a rich filling of red fruits. This snow roll will make you feel the Christmas spirit in every bite.

  • 6 egg whites, for the cake
  • 1/4 cups sugar, for the cake
  • 6 egg yolks, for the cake
  • 1/4 cups sugar, for the cake
  • 1 teaspoon vanilla essence, for the cake
  • 1 cup flour, sifted, for the cake
  • 1/4 cups butter, melted, for the cake
  • 1 cup mixed berries
  • 1 tablespoon lime juice
  • 1/2 cups icing sugar
  • 190 grams cream cheese, cut into cubes and at room temperature
  • 1 envelope unflavored gelatin powder, (7 g) hydrated and melted
  • 1 cup whipped cream
  • white chocolate, in shavings, for decoration

  • Preheat the oven to 180° C.
  • In a bowl, beat the egg whites with the sugar using the whisk attachment of your Braun® MultiQuick 7 until stiff peaks form. Set aside.
  • In another bowl, beat the egg yolks with the sugar and vanilla using the whisk attachment of your Braun® MultiQuick 7. Gently fold in the egg whites until completely incorporated.
  • Carefully add the flour and butter to the previous mixture to avoid deflating it.
  • Spread the mixture with a spatula onto a baking sheet lined with parchment paper. Bake for about 10 to 12 minutes.
  • Once the cake is baked, place it on a cloth or sugar-dusted kitchen towel and roll it up while hot. Set aside.
  • For the frosting, using the puree attachment of your Braun® MultiQuick 7, process the red fruits with lemon juice until you obtain a smooth puree. Set aside.
  • Cream the cheese with the powdered sugar, add the red fruit puree, and mix well. Add the gelatin in a thin stream and gently fold in ¾ of the whipped cream.
  • Unroll the cake and add the red fruit filling. Roll it up and cover with ¼ of the reserved whipped cream. Refrigerate until the filling is completely set.
  • Decorate with white chocolate shavings.
