Three Milk Cake

This recipe is for preparing the classic Mexican dessert of three milk cake, easy and delicious.

  • 10 eggs
  • 1 cup sugar
  • 1 1/2 cups flour , soft
  • 1/2 cups cornstarch , white
  • 1 tablespoon clear vanilla
  • 1 tablespoon baking powder
  • 1 can condensed milk , to soak the cake
  • 1 can evaporated milk, to soak the cake
  • 2 cups cow's milk , liquid, to soak the cake
  • syrup, peach, to soak the cake
  • canned pineapple syrup, sour cherries
  • 1 cup chantilly cream powder, for decoration
  • 3 1/2 cups cow's milk , cold, for decoration
  • 1 kiwi, for decoration
  • peaches, or peach wedges, for decoration

  • Beat the eggs with the sugar until white and creamy.
  • Then, gradually add and mix with a soft spatula in a folding motion the flour that has been sifted 6 times along with the baking powder and cornstarch; these can be sifted once. Add the vanilla and check for any lumps of flour, place in a greased and floured mold.
  • Bake at 90º C or 375º F for 30 minutes.
  • Unmold immediately and let cool.
  • Mix the three milks, syrups, soak the cake, and set aside.
  • On the side, whip cream with cold milk until shiny and cover the cake. Decorate with peach roses, kiwi, and red cherries, decorate and serve cold.
