Three Milk Cake with Coffee Liqueur

Making a homemade coffee cake is a great way to treat yourself. With a soft sponge made from pancake flour, this three milk cake is perfect for celebrating a birthday or any other special occasion. This popular dessert is not complicated to make and as a tip, we recommend not opening the oven while it's baking.

  • 1 cup vegetable oil, for the sponge cake
  • 1 cup sugar, for the sponge cake
  • 5 eggs, for the sponge cake
  • 2 1/2 cups pancake mix, for the sponge cake
  • 1 cup cow's milk, for the sponge cake
  • 1 teaspoon baking powder, for the sponge cake
  • 1 cup condensed milk, for the three milks
  • 1 cup evaporated milk, for the three milks
  • 1 1/2 cups whole milk, for the three milks
  • 1 stick cinnamon, for the three milks
  • 1 tablespoon instant coffee, for the three milks
  • 3 tablespoons coffee liqueur, for the three milks
  • whipped cream, for decoration
  • bittersweet chocolate, grated, for decoration

  • Preheat the oven to 170 °C.
  • In a mixer, combine the oil, sugar, eggs, pancake flour, milk, and baking powder.
  • Pour the mixture into a rectangular mold, previously greased and floured. Bake for 30 minutes.
  • For the three milks: in a small pot, heat the condensed milk, evaporated milk, whole milk, cinnamon, and instant coffee. Mix until fully combined, then remove from heat and add the coffee liqueur. Let cool and set aside.
  • Using a fork, poke the sponge cake and gradually pour the milk so that it absorbs it. Refrigerate for 30 minutes.
  • Spread whipped cream over the sponge cake, decorate with dark chocolate, cut a slice, and enjoy.
