In another deep bowl, use an electric mixer to beat the butter and brown sugar until fluffy. Add the eggs and continue beating. Add the flour mixture and the fruits with the rum juice and finish mixing.
Pour the batter into the muffin liners and bake in a preheated oven at 150 degrees Celsius. Bake for 45-60 minutes or until a toothpick inserted comes out clean.
While the muffins are baking, heat the apricot jam with 1 tablespoon of rum in a small pot.
Remove the pastries from the oven and allow them to cool for 30 minutes. With a brush, paint the tops with the apricot jam. Serve the pastries.
