Cannoli from Sicily

This Italian recipe is completely delicious. It consists of a light and crispy dough filled with ricotta cheese, powdered sugar, orange zest, and chocolate chips. The recipe does take some time, but it is a nice treat when finished.

  • 1 1/3 cups flour
  • 1/4 tablespoons salt
  • 1 tablespoon sugar
  • 2 tablespoons cocoa powder
  • 2 tablespoons unsalted butter
  • 6 tablespoons marsala wine
  • 2 eggs , whipped
  • vegetable oil , for frying

  • 3 cups ricotta cheese
  • 1 1/3 cups powdered sugar
  • 1 1/2 tablespoons vanilla essence
  • 1/3 cups caramelized orange peel
  • 1/3 cups semi-dark chocolate chips

  • TO MAKE THE DOUGH: Start by mixing the flour, salt, sugar, and cocoa in a deep bowl. Mix well.
  • In an electric mixer with a dough hook, mix the flour mixture with the butter until crumbly. Add the Marsala wine and continue mixing.
  • Place the dough on a clean floured surface and knead for 3 minutes. Form a ball and cover with plastic wrap, allowing it to rest for 1 hour.
  • Divide the dough into 4 balls and pass the dough through your pasta machine on the widest setting. Fold the dough into thirds and pass it through the machine again, repeating this 3-4 more times. Repeat with the other balls of dough.
  • Cut a piece of cardboard into an oval measuring 7 x 9 cm to use as a template for cutting the pasta. Place the cardboard over a piece of dough and using a sharp knife, cut out ovals (as many as will fit in your flattened dough).
  • Heat 6-7 cm of oil in a large pot over medium heat. While it heats up, make the cannoli using your cannoli molds and wetting the dough with a little beaten egg white. Place on a baking sheet lined with plastic wrap.
  • Cook the cannoli by placing 3-4 cannoli tubes with dough in the boiling oil and after 45 seconds, using tongs, remove the dough from the tube, take the tubes out of the oil, and allow the dough to finish browning; repeat with all the ovals. Allow to cool before filling.
  • TO MAKE THE RICOTTA FILLING: In a deep bowl, mix the ricotta with the powdered sugar and vanilla until fluffy using a whisk.
  • Add the orange zest and chocolate chips and finish mixing.
  • Fill the Cannoli with a piping bag, then dip the edges in chocolate chips and serve immediately.
