Caramel Corn for the Holiday Season

  • 8 cups popcorn kernels, prepared
  • 1 cup salted peanuts
  • 1/4 cups unsalted butter
  • 3 tablespoons corn syrup
  • 1/2 cups brown sugar
  • 1 package cherry gelatin

  • Preheat the oven to 180°C (350°F). Line a baking pan with aluminum foil or parchment paper; set aside. Mix the popcorn and peanuts in a large bowl; set aside.
  • Heat the butter and corn syrup in a small saucepan and stir over low heat until melted. Add the sugar and gelatin; mix well and bring to a boil over medium heat. Reduce the heat to low; cook for 5 minutes. Immediately pour the syrup over the popcorn, tossing to coat evenly. Use two forks to spread the popcorn in the prepared pan.
  • Bake the popcorn for 10 minutes. Let it cool. Break it into small pieces.
