Carrot Cake with Cream Cheese Frosting

  • 3 cups flour
  • 1 1/2 cups sugar
  • 3 teaspoons baking soda
  • 3 teaspoons cinnamon
  • 1 1/2 teaspoons salt
  • 2 cups corn oil
  • 6 eggs
  • 3 cups carrot, raw grated
  • 3/4 cups walnuts, chopped and toasted in the oven
  • 1 cup butter, (for the frosting)
  • 380 grams cream cheese, for the frosting
  • 3 cups icing sugar, (for the frosting)
  • 2 milliliters vanilla essence, (for the frosting)
  • 1 tablespoon vanilla essence
  • 2 drops food coloring, for the frosting
  • 5 walnuts, for decoration

  • Preheat the oven to 180° C.
  • Grease and flour the pans. Sift the flour, sugar, baking soda, cinnamon, and salt.
  • Add the dry ingredients to the mixer, and while mixing, add the oil until perfectly incorporated; add the eggs one at a time until fully integrated. Add the carrots and mix for 5 more minutes.
  • Add the nuts and mix lightly. Divide the mixture and pour it into two previously greased and floured round pans.
  • Bake for 1 hour or until a toothpick inserted comes out clean.
  • For the frosting, beat the butter until creamy, then add the cream cheese with the sugar and vanilla until smooth.
  • Remove the cakes from the pans, spread some frosting on one of them, and cover it with the other cake. Decorate with the remaining frosting and nuts.
