Carrot Cake with Walnuts

Delicious simple recipe for carrot cake with walnuts and cream cheese frosting.

  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 4 eggs
  • 1 1/2 cups vegetable oil
  • 3 cups carrot, grated
  • 1 1/2 cups walnuts, chopped
  • 2 packages cream cheese, for the frosting
  • 1 stick butter, at room temperature (for the frosting)
  • 450 grams icing sugar
  • 1 teaspoon vanilla essence, for the frosting
  • 1/2 cups walnuts, chopped (for decoration)

  • Preheat the oven to 180°C.
  • Grease and flour 3 round cake pans of 22 cm in diameter.
  • In a bowl, mix the flour, sugar, baking powder, cinnamon, and salt. Add the eggs and oil.
  • Using a hand electric mixer, beat until well combined.
  • Add the grated carrot and chopped walnuts.
  • Pour the mixture into the 3 cake pans and bake in the preheated oven for 40 minutes.
  • Remove from the oven and let cool for 5 minutes.
  • Remove from the mold and let cool before applying the frosting.
  • Prepare the frosting: mix the cream cheese with the butter, powdered sugar, and vanilla extract using an electric mixer.
  • Spread the frosting on each layer of the cake and around the sides. Decorate with chopped walnuts around or sprinkled on top.
