Cheese Ring with Blackberry

  • 3 cups requesón
  • 2 cups Greek yogurt
  • 1 1/2 cups flour
  • lemon zest
  • 2 tablespoons vanilla essence
  • 1 cup San Juan® egg whites
  • 1 cup sugar
  • 1 1/2 cups blackberries
  • blackberries, for decoration
  • Greek yogurt, for decoration
  • lemon, sliced, for decoration

  • Place the ricotta and yogurt in a bowl, mix with a whisk and gradually add the lemon zest and flour using a sifter. Combine until you achieve a homogeneous preparation.
  • Beat the San Juan® Egg Whites with sugar until reaching a nougat point. Set aside.
  • Gently fold the egg whites into the ricotta mixture to avoid losing air; once integrated, you can add the blackberries.
  • Pour into a previously floured and greased ring mold, bake at 180 °C for 35 minutes. Let cool and unmold.
  • Decorate with yogurt, blackberries, and lemon slices.
