Cherry Cake

This Cherry Cake is what is called a Cobbler or Fruit Cake in the United States. The ideal fruits for this type of cake are seasonal.

  • 3 cups cherries
  • 3 cups raspberries
  • 3/4 cups sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon salt
  • 1 lime, its juice
  • 1 1/2 cups flour
  • 2 tablespoons baking powder
  • 6 tablespoons unsalted butter, at room temperature
  • 3/4 cups table cream
  • vanilla ice cream, for serving

  • Preheat the oven to 200 degrees Celsius.
  • In a large deep bowl, mix the cherries, raspberries, sugar, cornstarch, lemon juice, and a pinch of salt. Combine with a wooden spoon.
  • Pour this mixture into a baking dish of approximately 20 x 20 cm.
  • In another deep bowl, mix the flour, 1 tablespoon of sugar, 1 tablespoon of salt, and baking powder.
  • Using your hands, mix the butter with the flour until you achieve a consistency like wet sand.
  • Add the half-and-half and mix well until you obtain a dough.
  • Put a little flour on your hands and shape the dough into 9 squares of approximately 5 cm.
  • Place the squares on top of the cherry and raspberry mixture.
  • If desired, you can brush the squares with a little egg mixed with water to make them golden and brown.
  • Bake the cake until the squares are golden, approximately 10 minutes. Remove from the oven and allow the cake to cool before serving.
