Chocolate and Macadamia Nut Wonder Cookies

  • 1 cup semisweet chocolate, in pieces
  • 3/4 cups brown sugar
  • 1/4 cups unsalted butter , at room temperature
  • 2 eggs
  • 1 teaspoon liquid vanilla
  • 1/2 cups flour
  • 1/4 teaspoons baking powder
  • 1 cup white chocolate
  • 2 cups macadamia nut

  • Microwave the semi-sweet chocolate in a large microwave-safe bowl on high power for 2 minutes. Stir until the chocolate is completely melted and smooth. Add the sugar, butter, eggs, and vanilla; stir with a wooden spoon until well combined. Add and mix in the flour and baking powder. Fold in the white chocolate and nuts.
  • Drop 1/4 cup of the mixture, 2 inches apart from each other, onto a greased baking sheet.
  • Bake at 180°C for 13 to 14 minutes or until the cookies puff up and feel firm to the touch. Cool for one minute; remove the cookies from the sheet. Cool completely on wire racks.
