  • 6 oranges, Thick-skinned citrus peels
  • 2 cups sugar
  • 1/2 limes
  • 160 grams semisweet chocolate

  • Scrape the skin of the oranges, cut the oranges in half, and discard the pulp. Cut the peel into strips that resemble half moons. Rinse them.
  • Boil them with 3 cups of water in a pressure cooker for 20 minutes. Change the water and repeat the process, meaning boil them twice in the pressure cooker with different water to soften them and remove the bitter taste.
  • In a thick pot, prepare a syrup with 1 cup of water, 2 cups of sugar, and the juice of half a lemon.
  • Add the peels to the syrup and simmer for half an hour.
  • Dry the peels on a rack for 2 days if it’s warm, but do not let them dry completely. If it’s cold, it takes 3 days.
  • Once ready, melt the chocolate in a double boiler and dip the peels halfway. Place them on a tray lined with wax paper and let them cool until the chocolate hardens.
