280 grams semisweet chocolate, (fondant)
280 grams unsalted butter , at room temperature (fondant)
6 egg yolks, (fondant)
6 eggs , (fondant)
3 cups powdered sugar, (fondant)
1 cup flour , (fondant)
1/2 cups mixed berries, strawberry, raspberry, blueberry, blackberry (coulis)
1/4 cups powdered sugar, (coulis)
1 tablespoon lemon juice , (coulis)
cranberries, fresh for decoration

Fondant: Melt the chocolate and butter in a pot over low heat to prevent burning.
In a bowl, beat the egg yolks and whole eggs, and once well combined, add the powdered sugar. Then add the chocolate and finally the sifted flour.
Fill a silicone cupcake mold up to 3/4 with the mixture. You can also use paper liners to prevent sticking if you don't have a silicone mold.
You should refrigerate the cakes because they need to be served almost immediately. 10 minutes before serving, preheat the oven to 230°C.
Bake for 5 minutes and remove from the oven (add two minutes if they are cold). Remove them from the molds.
Coulis: You can prepare this in advance so that when it's time to bake your cakes, it is ready.
In a saucepan over low heat, cook the red fruits, powdered sugar, and lemon juice. Allow it to boil for 5 minutes.
Strain the mixture using a fine mesh strainer and press the fruit to extract the juice.
