Combine the egg yolks and 1/4 cup of sugar in the mixer and beat until fluffy. Add vanilla and 2 tablespoons of coffee.
Beat the egg whites separately until frothy; gradually add the sugar until it reaches the soft peak stage.
Combine the walnuts, baking powder, and salt. Gradually add 1/3 of the yolk mixture, 1/3 of the egg white mixture, and mix gently until fully combined.
Pour the mixture into the pans and bake in the oven for 30 minutes.
Let cool for 10 minutes and then remove from the pan.
In another bowl, combine the cream, honey, 1 teaspoon of coffee, and let it simmer over low heat.
Add the chopped chocolate and 1 teaspoon of vanilla.
Stir the frosting mixture.
Place the first cake and cover it with frosting, then place the second cake on top of the first and also cover it with frosting.
Decorate with walnuts.
