Coconut Brownies

  • 120 grams bittersweet chocolate
  • 180 grams unsalted butter
  • 2 tablespoons vanilla essence
  • 1 cup shredded coconut

  • 4 eggs
  • 2 cups sugar
  • 1 1/2 cups flour

  • Preheat the oven to 180 degrees Celsius (350 F).
  • Melt the chocolate and butter in a double boiler.
  • In a mixer, put the eggs and beat until they have a pale yellow color. Gradually add the sugar and continue beating until thickened. Add the vanilla, sifted flour, and coconut. Finally, add the chocolate (cooled, not hot).
  • Pour the mixture into a greased and floured 8x12 cm baking dish.
  • Bake for 15-20 minutes.
  • Remove from the oven and let cool in the pan.
  • Cut the brownies into squares. On each square, drizzle a bit of chocolate syrup and sprinkle grated coconut on top.
