Dark Chocolate Brownie

The dark chocolate brownie is a typical dessert in the cuisine of the United States, where there are many varieties and presentations. Brownies can be made solely with chocolate, or they can include other ingredients such as banana, nuts, toffee, or caramel. Additionally, brownies can be presented covered with fondant or various glazes. In our case, we have chosen to make a dark chocolate brownie to maintain the chocolate flavor.

  • 90 grams flour
  • 330 grams brown sugar
  • 60 milliliters espresso coffee
  • 220 grams dark chocolate , 70%
  • 250 grams unsalted butter
  • 3 eggs
  • 35 grams unsweetened cocoa powder
  • 3 grams salt
  • 5 grams dry yeast

  • Preheat the oven to 180ºC. Grease the mold with butter and line the inside with parchment paper, allowing it to hang over the edges a little.
  • Chop 200 grams of chocolate (reserve the other 20) and the butter into pieces. Mix over a water bath, making sure the chocolate doesn't burn. Once the chocolate and butter have melted, add the sugar and stir until most of it has dissolved. Typically, a small amount of sugar will remain undissolved, which will help achieve the characteristic texture of the brownie.
  • Remove from heat. Once the mixture has cooled slightly, incorporate the eggs one at a time. Once the eggs are mixed in, add the cold espresso coffee (the coffee is to enhance the chocolate flavor, although you can omit it), and the remaining 20 grams of chocolate cut into small pieces.
  • In a separate bowl, mix the flour, salt, baking powder, and cocoa powder. Stir until you have a homogeneous mixture. Add the dry ingredients to the wet ingredients and mix with a spatula until a homogeneous batter is obtained. Do not overmix the batter, as it could result in a very tough dark chocolate brownie once baked.
  • Pour the mixture into the mold and bake in the oven until a toothpick inserted in the center comes out clean (about 40-50 minutes depending on the oven).
  • Once baked, remove the dark chocolate brownie from the mold using the parchment paper to cool it. Place it on a wire rack to cool completely. You can sprinkle powdered sugar or cocoa powder for decoration.
