Elegant Bourbon and Pecan Brownies

  • 198 grams semisweet chocolate
  • 1/2 cups unsalted butter
  • 2 eggs
  • 1/4 cups sugar
  • 1/4 cups bourbon, or to taste
  • 1 teaspoon vanilla essence
  • 1/4 cups flour
  • 1/4 teaspoons baking powder
  • 1 pinch salt
  • 1 cup pecans, lightly toasted
  • 85 grams white chocolate, for frosting
  • 1 tablespoon unsalted butter, for frosting
  • 1 cup icing sugar, sifted for frosting
  • 3 tablespoons cow's milk

  • Preheat the oven to 176°C.
  • Melt 141 grams of semi-sweet chocolate and the butter in a saucepan or double boiler, stirring until smooth. Remove from heat and let cool completely.
  • In a large bowl, beat the eggs and sugar until the mixture is thick and pale. Beat in the bourbon and vanilla. Set aside.
  • Mix flour, baking powder, and salt. Add to the egg mixture and incorporate. Stir in the mixture of nuts and chocolate.
  • Spread half of the mixture into a greased 20-centimeter square pan. Bake for 30 minutes or until the brownie pulls away from the sides of the pan.
  • Remove from the oven and let cool. Spread with the White Chocolate Frosting.
  • Unmold the brownies, cut into 5-centimeter squares, and place on a sheet of wax paper. Melt the 56 grams of semi-sweet chocolate and drizzle it over the top and sides of the brownie.
  • White Chocolate Frosting: Melt the butter and chocolate in a saucepan or double boiler, stirring until the mixture looks smooth.
  • Remove from heat and let cool completely. Beat in the sugar. Gradually beat in the milk until the frosting reaches the desired consistency.
