To step away from the conventional, make this recipe for pistachio and amaranth brownies; not only will you enjoy them, but you’ll also have a sweet yet very healthy snack.
200 grams couverture chocolate, white, for decoration
1/3 cups cow's milk, for decoration
1 cup amaranth, lightly toasted, for decoration

Melt the butter and add the finely chopped white chocolate, mixing until well combined.
Beat the eggs and sugar until pale. Add the chocolate mixture and continue beating until lightened. Add the rest of the dry ingredients and mix until the lumps disappear. Add the pistachios and mix again.
Pour into molds, preferably individual snack-sized, greased and lined with parchment paper. Fill up to 3/4 of their capacity. Bake at 180 °C for 30 minutes or until firm.
Let cool in the molds.
To decorate: melt the chocolate and mix with the hot milk. Skewer the brownies with a fork to help you and cover them with the amaranth.
