If you love brownies, you have to try this version enhanced with peanut butter. The combination is incredibly good. The perfect dessert for everyone. Pair it with a delicious glass of cold milk.
Line a baking dish with aluminum foil, extending the foil over the sides to create handles. Grease the aluminum foil. In a large microwave-safe bowl, heat the chocolate and butter on high for 2 minutes or until the butter has melted. Stir until the chocolate is completely melted. Add the sugar; mix well. Add the eggs and vanilla; mix well. Add the flour and stir until well combined. Add 1 cup of the chopped cookies, the peanut butter, and 1 cup of the chopped peanuts; mix well.
Spread the mixture over the prepared dish. Sprinkle with the remaining cup of chopped cookies.
Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out with moist crumbs. (Do not overbake). Let it cool. Remove from the pan and cut into squares.
