This innovative chocolate-coffee cake will impress your guests at home. I usually make it for gatherings with family and friends; don't hesitate to prepare it.
With the first 6 ingredients, we will make the cake base. Mix and chop the butter with the flour using a spatula until perfectly integrated, then add the yolks, egg, and salt until perfectly combined.
Grease a 22 cm cake pan and place the dough we have prepared, bake at 180°C for 15-18 minutes, remove and cool.
With the following 5 ingredients, we will make a ganache. Heat the cream until it boils and dissolve the coffee, pour this preparation over the chopped chocolate and stir until it melts, add the butter and banana puree. We will pour this mixture over the already baked cake and return it to the refrigerator.
Now with the last ingredients, we will make a banana mousse. We mix the puree, lemon juice, and pastry cream thoroughly with the help of a spatula, gently folding in the Italian meringue, and finally adding the melted gelatin.
Grease an 18 cm ring with oil and powdered sugar. Place plastic wrap or aluminum foil at the bottom and pour in the mousse mixture, refrigerate until set, and unmold.
Take the cake out of the refrigerator, place the banana mousse over the chocolate and coffee ganache, and decorate.
