200 grams bittersweet chocolate
100 grams unsalted butter
260 grams egg yolk
50 grams sugar
60 grams egg white
40 grams sugar
1 package raspberries
6 balls ice cream
unsalted butter , necessary amount to grease the mold
flour , necessary amount to flour the mold
peppermint, to taste

Melt the chocolate with the butter in a double boiler
In a bowl, mix the egg yolks with the sugar
Mix the melted chocolate with the egg yolks and set aside.
Whip the egg whites with the 40g of sugar. Once whipped, gently mix with the chocolate
Butter and flour the molds
Pour the mixture into the molds
Preheat the oven to 200 C
Place the molds in the oven for 9 minutes at 180C
Serve hot
