Two Chocolate Pie (no bake)

I started to get interested in baking and whenever I can, I look for new recipes to experiment and see how good I am at it. Every dessert I make, I make for my mom; she is my judge and tells me if it turned out well, if she had enough, or if something was missing, but this pie is undoubtedly her favorite and mine too.

  • 1 package María cookies
  • 1/2 cups unsalted butter
  • 1/4 cups strawberry
  • 1 stick cream cheese, Philadelphia type
  • 1 cup dark chocolate
  • 1/2 cups white chocolate
  • 2 cups whipping cream
  • 1/2 cups sugar
  • 1 1/2 teaspoons unflavored gelatin powder
  • 1 teaspoon vanilla essence

  • wash and disinfect the strawberries very well and set aside
  • spray a 23 cm removable springform pan with cooking oil and set aside
  • in a completely dry blender, pour in the cookies and grind until they turn to powder
  • in a bowl, pour the cookie powder, melt the butter in the microwave and pour it into the cookie powder, mixing until a smooth paste is obtained
  • cut the strawberries vertically and in half, arrange them around the mold and set aside in the refrigerator
  • in another bowl, add the cream cheese, sugar, and vanilla, and beat until creamy
  • add 1 cup of whipping cream and whip until the mixture doubles in size and forms peaks
  • in the microwave, melt the white chocolate in 30-second intervals until it flows like a ribbon
  • add the chocolate to our cheese mixture and beat until incorporated
  • we will hydrate the gelatin in 1/4 cup of water, mix and microwave for about 10 seconds
  • take a little of our mixture and mix it with the gelatin to temper it, and once it's not too hot, add it to the mixture and beat again so it doesn't set
  • take the mold out of the refrigerator
  • add the mixture to the mold and spread with a spatula. This will be refrigerated for about 3 to 4 hours
  • we will turn on the stove on low heat and in a pot, put the other cup of whipping cream and mix a little until it warms up
  • then add the cup of dark chocolate and whisk with a balloon whisk until melted
  • turn off the stove and continue whisking until the chocolate cools and becomes something like a glaze or ganache
  • after three hours, take out our pie and it should be solid to the touch
  • add our cooled chocolate to the pie and spread with a spatula
  • before the chocolate hardens, decorate with seasonal fruits or to taste
  • refrigerate for the last time for 30 minutes
  • unmold, serve, and enjoy
