Chocolate Fondant with Berry Sauce

  • 1 stick semisweet chocolate
  • 1 stick unsalted butter
  • 3 eggs
  • 1/2 cups sugar
  • 1/2 teaspoons salt
  • 2 tablespoons port wine
  • 1/2 tablespoons vanilla essence
  • 1 cup flour
  • icing sugar
  • 1 cup mixed berries, (raspberries, strawberries, blackberries)

  • Preheat the oven to 220 degrees Celsius and grease 6 small soufflé molds with butter.
  • In a medium-sized pot, melt the chocolate and butter using a double boiler. Once melted, remove from heat.
  • Add the sugar and salt and whisk with a balloon whisk.
  • Add the eggs, port wine, and vanilla, and continue whisking.
  • Add the flour and finish whisking well.
  • Pour the mixture evenly among the 6 molds and place them in a somewhat deep container so you can add some water while baking.
  • Boil two cups of water and pour it into the container where the molds are placed.
  • Bake the cakes for 20 to 25 minutes or until a toothpick inserted in the edges comes out clean but slightly moist when inserted in the middle.
  • Prepare the sauce while the cakes are baking by blending the berries.
  • Pour the cakes onto individual plates and serve with the berry sauce.
