Make these delicious red velvet truffles for special occasions. They have an intense red velvet cake flavor and are covered on the outside with a rich layer of white chocolate and semi-sweet chocolate. They are perfect for surprising your loved ones.
Sift the flour, baking powder, salt, and cocoa powder through a strainer. In another bowl, beat the oil with the sugar, milk, egg white, red food coloring, and vanilla.
Combine the baking soda with the apple cider vinegar and add it to the mixture. Gradually add the flour mixture and beat until everything is well combined.
Place cupcake liners in a cupcake mold and pour the mixture into each one. Bake at 180°C for 20 minutes. Remove from the oven and let cool completely.
Combine the cream cheese with the powdered sugar and beat until there are no lumps.
Crumble the cupcakes and add the cream cheese frosting. Form balls using a measuring spoon and freeze them for 1 hour. Melt the white chocolate in the microwave and coat the red velvet balls.
Refrigerate for 1 hour or let the chocolate dry at room temperature for 2 hours.
Cover the truffles with melted semi-sweet chocolate and let the chocolate harden for 1 hour in the refrigerator.
