Mocha Bread Pudding

  • 190 grams cream cheese, at room temperature
  • 1/4 cups sugar
  • 3 eggs
  • 10 slices white bread
  • 1 1/2 tablespoons instant coffee
  • 1 1/2 cups cow's milk
  • 150 grams semisweet chocolate

  • Preheat the oven to 180°C.
  • Lightly spray 10 baking ramekins (1 cup) or coffee cups with non-stick cooking spray.
  • Beat the cream cheese, sugar, and 1 egg until well combined. Evenly spread the bread slices with this mixture; cut each slice into four. Place 4 pieces in each ramekin.
  • Dissolve the coffee in the milk in a medium bowl. Add the remaining 2 eggs; whisk with a hand whisk until well combined. Pour evenly over the bread in each ramekin. Sprinkle evenly with chocolate.
  • Bake for 20 to 25 minutes or until the mixture rises and is golden brown. Let cool for 5 minutes before serving.
