Whoopie Pie with Christmas Candy Canes

  • 1 box brownie mix
  • 1 1/4 cups flour
  • 1/4 cups brown sugar
  • 1/4 teaspoons salt
  • 2 eggs , large
  • 2 tablespoons cow's milk
  • 1/2 cups unsalted butter , melted
  • 1 teaspoon vanilla essence
  • 3/4 teaspoons peppermint extract
  • 1/2 cups peppermint candy cane, crushed (filling)
  • 1/2 cups unsalted butter , softened (filling)
  • 3 cups powdered sugar, (filling)
  • 1/4 cups whipping cream , (filling)
  • 1 tablespoon vanilla essence, (filling)
  • 1/8 teaspoons peppermint extract, (filling)
  • 2 teaspoons peppermint candy cane, crumbled and sifted (filling)
  • 1 tablespoon water, (filling)
  • 1 pinch salt , (filling)
  • powdered sugar, (for dusting)

  • Preheat the oven to 180°C.
  • In a large bowl, whisk together the brownie mix, flour, brown sugar, and salt.
  • Add the eggs, milk and continue mixing. Add the melted butter, vanilla, and mint extract, stirring until well combined.
  • Pour the divided batter into two greased round pans lined with parchment paper. Bake for 9-11 minutes. Remove from the oven and let cool completely.
  • For the filling: Beat the butter and powdered sugar with an electric mixer for 2 minutes. Add the vanilla, heavy cream, water, and salt. Beat on high speed for 4-5 minutes until the mixture is fluffy.
  • Continue adding water one teaspoon at a time until you reach the desired consistency (it should be thick and fluffy).
  • Once the brownies are completely cool, remove them from the mold and add the filling to one of them, placing the other brownie on top to form a sandwich.
  • Add the crushed candy canes, covering the edge of the filling.
  • Dust with powdered sugar.
