Christmas Yoghurt Mousse

  • 2 envelopes unflavored gelatin powder, hydrated
  • 1 1/2 cups cookies
  • 5 tablespoons butter, melted
  • 1 cup raspberries, frozen
  • 1 cup strawberries, frozen
  • 5 leaves basil
  • 1/4 cups sugar
  • 1/2 cups Oikos® plain Greek yogurt
  • 1/2 cups whipping cream
  • 2 cups strawberries, frozen, for decoration
  • 10 leaves basil, for decoration

  • In a blender, crush the cookies.
  • In a bowl, mix the crushed cookies with the butter.
  • In a springform pan, place the previous mixture at the base, press until it is even. Set aside.
  • In a processor, blend the raspberries, strawberries, sugar, and basil leaves, add Natural Yoghurt Oikos® and heavy cream, and continue blending for 2 more minutes.
  • Dissolve the gelatin in a double boiler.
  • Gradually add the gelatin to the processor and pour it over the cookie base, refrigerate for 2 hours.
  • Unmold and place it on a flat plate.
  • Cut the strawberries in half and add the strawberries and basil leaves.
