Coconut Cupcake

With this recipe, you can easily prepare delicious Coconut Cupcakes that will be decorated at the end with your preferred Vanilla Frosting and shredded coconut available at the supermarket.

  • 3 cups flour
  • 1 tablespoon baking powder
  • 1/2 tablespoons salt
  • 3 sticks unsalted butter
  • 2 cups sugar
  • 5 eggs
  • 2 tablespoons vanilla essence
  • 1 cup cow's milk
  • 1/2 tablespoons vinegar
  • 3 cups grated sweet coconuts

  • Preheat the oven to 180 degrees and prepare two trays for cupcakes with liners.
  • In a deep bowl, mix the flour, baking powder, and salt.
  • In another bowl with an electric mixer, cream the butter with the sugar until the mixture is fluffy, about 3 minutes.
  • Continue mixing and add the eggs, vanilla, milk, and vinegar. Combine with the flour mixture gradually. Add 1 cup of coconut to the mixture.
  • Pour the mixture into the cupcake liners and bake for 25 minutes or until a toothpick inserted comes out clean.
  • Allow to cool and decorate with vanilla frosting and shredded coconut.
