1/3 cups unsalted butter
1/2 cups kahlua, Coffee Liqueur
1 cup chocolate chips
4 sticks cream cheese
1/3 cups sugar
4 eggs
2 tablespoons instant coffee
1 tablespoon vanilla essence

In a food processor, combine the cookies and melted butter until a pie crust forms.
In a 25 cm pie dish, press the crust to cover the entire base of the dish and rise up the edges by 1 cm, refrigerate.
In a small saucepan, bring the Kahlua to a boil over medium heat for 10 minutes. Remove from heat.
Preheat the oven to 180 degrees Celsius.
In a double boiler, melt the chocolate chips.
In a food processor, mix the Kahlua, cream cheese, sugar, eggs, coffee, vanilla, and melted chocolate.
Pour the cheese mixture over the pie crust and bake for 60 minutes or until the top looks almost dry.
Remove from the oven and allow to cool before serving.
