Coffee and Cheesecake

A delicious chocolate cheesecake recipe for coffee afternoons or any birthday.

  • 25 OREO cookies
  • 1/3 cups unsalted butter
  • 1/2 cups kahlua, Coffee Liqueur
  • 1 cup chocolate chips
  • 4 sticks cream cheese
  • 1/3 cups sugar
  • 4 eggs
  • 2 tablespoons instant coffee
  • 1 tablespoon vanilla essence

  • In a food processor, combine the cookies and melted butter until a pie crust forms.
  • In a 25 cm pie dish, press the crust to cover the entire base of the dish and rise up the edges by 1 cm, refrigerate.
  • In a small saucepan, bring the Kahlua to a boil over medium heat for 10 minutes. Remove from heat.
  • Preheat the oven to 180 degrees Celsius.
  • In a double boiler, melt the chocolate chips.
  • In a food processor, mix the Kahlua, cream cheese, sugar, eggs, coffee, vanilla, and melted chocolate.
  • Pour the cheese mixture over the pie crust and bake for 60 minutes or until the top looks almost dry.
  • Remove from the oven and allow to cool before serving.
