  • 1/4 cups strong coffee
  • 3/4 cups sugar
  • 3 egg yolks
  • 1 cup butter, at room temperature

  • Place the coffee and sugar in a saucepan and cook over medium heat until achieving a syrup at 115°C.
  • Whip the egg yolks until frothy and pale in color. Begin to incorporate the syrup in a thin stream. Whip until it lightens in color.
  • Add the butter at room temperature. Whip until you achieve a well-emulsified preparation. Transfer to a bowl and refrigerate before use.
