1/4 cups strong coffee
3/4 cups sugar
3 egg yolks
1 cup butter, at room temperature

Place the coffee and sugar in a saucepan and cook over medium heat until achieving a syrup at 115°C.
Whip the egg yolks until frothy and pale in color. Begin to incorporate the syrup in a thin stream. Whip until it lightens in color.
Add the butter at room temperature. Whip until you achieve a well-emulsified preparation. Transfer to a bowl and refrigerate before use.
