Coffee Christmas Cake

This coffee Christmas cake recipe is an ideal option for a simple and economical dessert.

  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1/2 cups espresso coffee, (previously made)
  • 2 sticks unsalted butter
  • 1 cup sugar
  • 3 eggs
  • 1/3 cups strong coffee
  • 1/3 cups sugar
  • 1/3 cups rum , (or water)

  • Preheat the oven to 180°C. Use a medium non-stick bundt pan or grease and flour it without leaving any gaps.
  • Sift the flour with the baking powder and salt.
  • Beat the butter, add the sugar, incorporate the eggs (one at a time), add the cup of coffee and the flour mixture until well combined.
  • Pour into the mold and bake for 50 minutes or until you insert a toothpick and it comes out clean.
  • To soak the cake, combine the last three ingredients
