Coffee Tapioca

  • 250 grams tapioca
  • 2 1/2 cups water
  • 1 cinnamon stick
  • 1 tablespoon liquid vanilla
  • 1 piloncillo
  • 1 can condensed milk
  • 1 can evaporated milk
  • 3 tablespoons instant coffee

  • Mix the sweetened condensed milk, evaporated milk, and instant coffee in a bowl. Set aside.
  • Soak the tapioca in half a glass of water for 10 minutes.
  • Meanwhile, boil the rest of the water with cinnamon, piloncillo, and vanilla.
  • Add the tapioca with the soaking water and continue cooking for 45 minutes on low heat, stirring constantly.
  • Then add the milk mixture and let it boil for 10 minutes, stirring constantly.
  • Chill and serve.
