250 grams tapioca
2 1/2 cups water
1 cinnamon stick
1 tablespoon liquid vanilla
1 piloncillo
1 can condensed milk
1 can evaporated milk
3 tablespoons instant coffee

Mix the sweetened condensed milk, evaporated milk, and instant coffee in a bowl. Set aside.
Soak the tapioca in half a glass of water for 10 minutes.
Meanwhile, boil the rest of the water with cinnamon, piloncillo, and vanilla.
Add the tapioca with the soaking water and continue cooking for 45 minutes on low heat, stirring constantly.
Then add the milk mixture and let it boil for 10 minutes, stirring constantly.
Chill and serve.
