Chocolate Ice Cream Sandwich

  • 1/2 cups butter
  • 1/4 cups sugar
  • 1/4 cups raw sugar
  • 1 egg
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1/2 teaspoons salt
  • 1/2 cups Hershey's Natural Cocoa
  • 1/2 cups Hershey's semisweet chocolate pastry bar
  • 1/3 cups walnuts
  • 3/4 cups Hershey's semisweet chocolate chips

  • Place the melted Hershey's semi-sweet baking chocolate in a double boiler, stir until fully melted, and set aside.
  • Beat the butter, sugar, brown sugar, egg, flour, baking powder, salt, Hershey's Cocoa Natural, and melted Hershey's semi-sweet baking chocolate until a dough forms. Then, add the nuts and Hershey’s semi-sweet chocolate chips. Mix well.
  • Roll out the dough on a flat surface with a little flour, use a round cutter to make circles of cookie and place them on a baking sheet lined with parchment paper.
  • Bake the chocolate cookies at 180 °C for 10 minutes or until fully cooked.
  • Place some vanilla ice cream on one of the cookies and close it with another cookie, press lightly, and enjoy your chocolate ice cream sandwich.
