Place the melted Hershey's semi-sweet baking chocolate in a double boiler, stir until fully melted, and set aside.
Beat the butter, sugar, brown sugar, egg, flour, baking powder, salt, Hershey's Cocoa Natural, and melted Hershey's semi-sweet baking chocolate until a dough forms. Then, add the nuts and Hershey’s semi-sweet chocolate chips. Mix well.
Roll out the dough on a flat surface with a little flour, use a round cutter to make circles of cookie and place them on a baking sheet lined with parchment paper.
Bake the chocolate cookies at 180 °C for 10 minutes or until fully cooked.
Place some vanilla ice cream on one of the cookies and close it with another cookie, press lightly, and enjoy your chocolate ice cream sandwich.
