Chocolate Ice Cream Cookie Sandwich

Delicious ice cream sandwich to brighten any day, it’s a very colorful dessert because the chocolate ice cream is decorated with colored sprinkles. It’s perfect as a summer dessert on a hot afternoon. Don’t forget to make these sandwiches and share them at home.

  • 400 grams condensed milk
  • 1 cup milk powder, prepared
  • 295 grams canned heavy cream
  • 12 tablespoons cocoa, powder dissolved in ½ cup of warm water
  • 2 tablespoons vanilla essence
  • 1 pinch salt
  • 12 cookies, squares
  • 1/2 cups cocoa powder
  • rainbow sprinkles, or colored sprinkles

  • In the blender, add the condensed milk, prepared powdered milk, and cream, then add the cocoa, vanilla essence, and salt, and blend for one minute. Pour the mixture into a square baking dish (20 x 20 cm). Cover with plastic wrap and place in the freezer for six hours or until the ice cream sets. Remember to take the ice cream out of the freezer every 30 minutes and stir it to prevent ice from forming.
  • Prepare 12 cookies. When the ice cream is ready, take it out of the freezer and cut it into six squares with a small knife (you can use a cookie as a guide). Return to the freezer for 10 minutes. Remove the mold again and, using a spatula, take out the ice cream squares and place one on top of a cookie, then cover it with another cookie to form the sandwiches and cut each one in half.
  • Dip the edges of some sandwiches in cocoa powder and others in colored sprinkles. Keep the sandwiches frozen until it’s time to serve.
