Lemon Mousse with Mint

A cold lemon dessert, delicious for summer and warm weather. It's ideal if prepared a day in advance.

  • 285 grams sugar
  • 3/4 cups lime juice
  • 6 egg yolks
  • 2 eggs
  • 1 1/2 tablespoons lime zest
  • sprigs peppermint, fresh (for garnish)
  • 1 1/2 liters whipping cream

  • Mix 1 cup of sugar, lemon juice, 6 egg yolks, 2 whole eggs, and grated lemon zest in a large metal bowl or pot.
  • Place the bowl over a pot with a little water (creating a double boiler).
  • Using a whisk, beat until the mixture reaches a temperature of 160 F.
  • Transfer the bowl to another large bowl and let it cool, stirring occasionally.
  • With an electric mixer, whip 1 1/2 cups of heavy cream until it forms stiff peaks.
  • Fold in 1/3 of the whipped cream into the lemon mixture. Then add the rest of the whipped cream.
  • Divide the mixture into 8 small molds and let cool covered.
  • Garnish with mint leaves before serving.
