Lemon Mousse with Mint

3/4 cups lime juice
6 egg yolks
2 eggs
1 1/2 tablespoons lime zest
sprigs peppermint, fresh (for garnish)

Mix 1 cup of sugar, lemon juice, 6 egg yolks, 2 whole eggs, and grated lemon zest in a large metal bowl or pot.
Place the bowl over a pot with a little water (creating a double boiler).
Using a whisk, beat until the mixture reaches a temperature of 160 F.
Transfer the bowl to another large bowl and let it cool, stirring occasionally.
With an electric mixer, whip 1 1/2 cups of heavy cream until it forms stiff peaks.
Fold in 1/3 of the whipped cream into the lemon mixture. Then add the rest of the whipped cream.
Divide the mixture into 8 small molds and let cool covered.
Garnish with mint leaves before serving.
