Anniversary Ice Cream Cup

The combination of blueberry ice cream with red wine syrup and berries results in a gourmet and delicious dessert. Prepare this anniversary ice cream cup recipe.

  • 3 balls ice cream , Anniversary Santa Clara ®
  • 1 bottle red wine, Carmenere grape (750 ml)
  • 1/3 cups sugar
  • 1 teaspoon vanilla bean, or vanilla essence
  • 1 cup blueberries
  • 1 cup raspberries

  • In a saucepan, combine the bottle of wine with the sugar. Mix until dissolved. Let it simmer over medium heat until it reduces by half (approximately 15 minutes).
  • Let it cool and add the essence or vanilla pod.
  • Place the blackberries and raspberries in a bowl, pour the wine syrup over them. Cover with plastic wrap and refrigerate for 2 hours.
  • Serve two or three scoops of ice cream in a glass bowl, add the syrup with the fruits on top.
  • You can decorate with more fruits and powdered sugar.
