In a saucepan, combine the bottle of wine with the sugar. Mix until dissolved. Let it simmer over medium heat until it reduces by half (approximately 15 minutes).
Let it cool and add the essence or vanilla pod.
Place the blackberries and raspberries in a bowl, pour the wine syrup over them. Cover with plastic wrap and refrigerate for 2 hours.
Serve two or three scoops of ice cream in a glass bowl, add the syrup with the fruits on top.
