Remove the avocado from the skin, cut it into pieces, and place it in a ziplock bag in the freezer (this can be done the day before).
Place the evaporated milk in the freezer for at least one hour.
Put the sugar in the food processor or blender and process it until it becomes powdered sugar, add the egg white and the avocado and blend until everything is incorporated.
Whip the frozen milk in the mixer until it becomes fluffy.
Add the whipped milk to the avocado and fold gently, put it in the freezer for at least 3 hours and serve.
