Chocolate Mint Ice Cream

  • 2 cups whole milk
  • 3 cups whipping cream
  • 30 milliliters vanilla essence
  • 10 egg yolks
  • 1/2 cups sugar
  • 310 grams cajeta
  • 40 milliliters peppermint extract
  • 2 drops green food coloring

  • Mix the milk, two cups of cream, mint extract, and food coloring. Heat over low heat until it boils.
  • Whisk the egg yolks and blanch with the sugar. Then add the remaining cream.
  • Remove the milk mixture from the heat, let it cool slightly, and add the egg mixture, heating over low heat for 5 minutes, then remove from heat.
  • Cool slightly at room temperature and then put it in the freezer or ice cream maker. When it starts to become creamy, add the chocolate.
