3 cups whipping cream
30 milliliters vanilla essence
10 egg yolks
1/2 cups sugar
310 grams cajeta
40 milliliters peppermint extract
2 drops green food coloring
dark chocolate chips, If you don't have chocolate chips, you can chop chocolate into small pieces.

Mix the milk, two cups of cream, mint extract, and food coloring. Heat over low heat until it boils.
Whisk the egg yolks and blanch with the sugar. Then add the remaining cream.
Remove the milk mixture from the heat, let it cool slightly, and add the egg mixture, heating over low heat for 5 minutes, then remove from heat.
Cool slightly at room temperature and then put it in the freezer or ice cream maker. When it starts to become creamy, add the chocolate.
