Homemade Pistachio Ice Cream

Because I love ice cream and especially if it's pistachio, here I leave the recipe that I make, whether it's cold or hot, and it refreshes you a lot, and also it's very pleasant to prepare your own ice cream.

  • 120 grams pistachios, peeled
  • 30 grams almonds, peeled
  • 200 grams sugar
  • 6 egg yolks
  • 750 milliliters cow's milk

  • Place the pistachios and almonds, peeled, along with half of the sugar in a grinder or food processor (they can also be crushed in a blender), and grind everything quickly so that the almonds do not release oil.
  • Next, pour the milk into a saucepan. Add the previous mixture and place it on the heat. When the mixture comes to a boil, remove it from the heat, cover the saucepan, and let it cool for about 30 minutes.
  • Meanwhile, beat the egg yolks with the remaining sugar in a large bowl until creamy.
  • Next, strain the milk with pistachios over the beaten egg yolks and pour into a container. Place it on the heat and let it simmer, stirring constantly, until the mixture is creamy. Remove from heat and continue beating to lower the temperature.
  • Once the mixture is cool, pour it into the blender and blend at medium speed and slowly, then chill, and after that take it out and blend it again in the blender slowly (I mean press the blend button several times and slowly, do not let it grind all at once) and so keep putting it back in every 30 minutes, repeating the same procedure for 1 hour and a half.
  • Serve and enjoy.
