400 grams fruit of the forest, raspberries, blueberries, blackberries, strawberries, and blackcurrants
480 milliliters cow's milk
125 grams sugar
1/4 teaspoons salt
1 1/2 teaspoons unflavored gelatin, hydrated in 2 tablespoons of cold water
2 egg yolks, fresh
240 milliliters sour cream
2 teaspoons vanilla essence

Heat the milk, sugar, and salt until the sugar is completely dissolved and the milk is hot.
Remove from heat and add the hydrated gelatin. Mix until the gelatin is completely dispersed.
Beat the egg yolks and slowly add them to the milk when it is warm, stirring constantly.
Transfer the mixture to a metal bowl.
Place the bowl in an ice bath with salt. Chill to 15°C.
Wash the fruits.
Disinfect strawberries and other fruits with disinfectant drops for 10 to 15 minutes.
Drain and dry the fruits.
Store in heat-sealed bags and subject to slow freezing.
Freeze the fruit until it is completely frozen.
In the blender jar, grind it gradually at medium speed, incorporating the sugar slowly, adding a pinch of salt.
Whip until it becomes a dense and uniform cream.
Add the cream and vanilla, continuing to mix in the blender.
Whip until it looks as thick as possible, freeze for a while.
To serve, it can be decorated with fresh fruits, cookies, or whatever you like.
