Reduced Sugar Lemon Carlota Ice Cream

Lemon Carlota is one of the quintessential homemade dessert recipes, but to give it a completely original twist, we prepare this Reduced Sugar Lemon Carlota Ice Cream recipe, which will become a must-have for your afternoons with friends. The advantage of this homemade ice cream is that it contains 50% less sugar than regular versions, making it a fantastic low-calorie dessert.

  • 1 cup evaporated milk, for the carlota
  • 1/2 cups lime juice
  • 2 low-fat cream cheese, for the carlota, 190g
  • 1 package María cookies, for the carlota, 170g
  • 2 cups whipping cream
  • 1/4 cups lime zest, green
  • 3 tablespoons lemon zest
  • María cookies, crumbled, for decoration
  • lime, sliced, for decoration

  • For the carlota, blend the evaporated milk with the lemon juice, cream cheese, and sweeten with Splenda® Sugar.
  • In a baking dish, place a layer of cookies, spread some of the previous preparation, and cover with more cookies. Repeat until the dish is full and refrigerate until solidifies.
  • Once the carlota is solid, remove from the refrigerator and cut into cubes. Set aside.
  • For the ice cream, whip the cream until it doubles in volume and forms peaks, add the lemon zest, and sweeten with Splenda® Sugar.
  • Mix the previous preparation with the carlota cubes carefully and place the mixture in a container. Freeze until completely solid. Remove and serve the ice cream with crushed cookies and lemon slices.
