Tempura Ice Cream

  • 500 milliliters vanilla ice cream
  • 140 grams wheat flour, for the choux pastry
  • 85 grams unsalted butter , for the choux pastry
  • 250 milliliters water, for the choux pastry
  • 1 pinch salt , for the choux pastry
  • 200 grams wheat flour, for the tempura
  • 50 grams rice flour, for the tempura
  • 5 grams baking powder , for the tempura
  • 2 eggs , for the tempura
  • 280 milliliters water, fry, for the tempura
  • 200 grams strawberry , for the strawberry sauce
  • 2 lemons, for the strawberry sauce
  • 50 grams sugar , for the strawberry sauce

  • Bring the water, 250 ml, to a boil in a saucepan.
  • As soon as it starts to boil, add the butter to melt it.
  • Add the flour, 140 g all at once and stir until a paste similar to mashed potatoes forms.
  • Put in a mixing bowl on medium speed to let the steam escape and integrate the eggs one by one without stopping to stir.
  • On a greased baking sheet, form regular-sized balls with the help of a piping bag.
  • Bake at 180° until they puff up and brown.
  • Cut in half until cool and fill with vanilla ice cream, close, and wrap them with vitafil.
  • Place them in the freezer until completely frozen.
  • Make a batter with the remaining wheat flour, rice flour, baking powder, and the 280 ml of water.
  • Dip the choux filled with ice cream in the batter and fry immediately.
  • Prepare the strawberry sauce, wash and disinfect the strawberries and lemon, blend the strawberries with the lemon juice and add the sugar.
  • Coat them with the strawberry sauce and you're done!! Enjoy them as they say...
