Lemon Pie Ice Cream

This ice cream is lemon pie flavored, a delicious and very traditional dessert. The best part is that you don’t need an ice cream machine; you can make it in the comfort of your home, and it's perfect for everyone to enjoy.

  • Process the Maria cookies for 1 minute until they are powdered. If you don't have a food processor, you can crush them until they look like sand.
  • Add the melted butter and mix very well. Set aside.
  • Whip the very cold cream until it looks thick and forms peaks.
  • Mix the condensed milk with the lemon zest and lemon juice using a whisk.
  • Add ¼ of the whipped cream to the lemon mixture. Mix very well with a whisk.
  • Gently fold in the remaining cream using a spatula. Do it in parts to make it easier.
  • Pour ⅓ of the ice cream mixture into a mold. Cover with ⅓ of the cookie. Repeat the same 2 times to end with a layer of cookie on top.
  • Freeze for 8 to 10 hours or overnight.
  • Store in a covered container or something that can be sealed in the freezer to last longer.
