This ice cream is lemon pie flavored, a delicious and very traditional dessert. The best part is that you don’t need an ice cream machine; you can make it in the comfort of your home, and it's perfect for everyone to enjoy.

2 cups whipping cream
397 grams condensed milk
1/2 cups lime juice
2 tablespoons lime zest
20 María cookies
2 tablespoons butter, unsalted, melted

Process the Maria cookies for 1 minute until they are powdered. If you don't have a food processor, you can crush them until they look like sand.
Add the melted butter and mix very well. Set aside.
Whip the very cold cream until it looks thick and forms peaks.
Mix the condensed milk with the lemon zest and lemon juice using a whisk.
Add ¼ of the whipped cream to the lemon mixture. Mix very well with a whisk.
Gently fold in the remaining cream using a spatula. Do it in parts to make it easier.
Pour ⅓ of the ice cream mixture into a mold. Cover with ⅓ of the cookie. Repeat the same 2 times to end with a layer of cookie on top.
Freeze for 8 to 10 hours or overnight.
Store in a covered container or something that can be sealed in the freezer to last longer.
