Add the unsweetened dark chocolate to a pot with water and heat for 3 minutes until the chocolate melts.
Transfer the mixture to a bowl, add the sea salt, cool the saucepan with ice (inverse water bath), and whisk there with a hand mixer for 4 minutes, until it changes color and fluffs up.
Place in a plastic bag, cut one of the tips, and serve in a glass or individual cups. Decorate the chocolate mousse with raspberries and enjoy.
