Lemon Mousse with María Cookies

Lemon pie prepared with a delicious mousse and a touch of cold cream cheese. Additionally, the crunchy texture and sweet flavor of María cookies will be the perfect combination for a great dessert.

  • 380 grams cream cheese
  • 250 grams whipping cream
  • 340 grams María cookies
  • 2 envelopes unflavored gelatin
  • 1 tablespoon vanilla essence
  • 2 cans condensed milk
  • 1 can evaporated milk
  • 7 limes
  • 1 tablespoon lime zest, for decoration
  • 1/4 cups chocolate, chopped, for decoration

  • Slowly beat the 2 cream cheeses with the 2 cans of sweetened condensed milk and set aside.
  • Beat 2 cups of heavy cream until the cream forms peaks without collapsing.
  • Soak the gelatin in a little water just until the gelatin is covered, add the vanilla extract along with the lemon juice, and mix until incorporated.
  • Fold the whipped cream into the cream cheese and sweetened condensed milk mixture, being careful not to deflate the whipped cream.
  • Add the mixture of gelatin, lemon, and vanilla to the mixture from step 4 and beat until incorporated.
  • Form a layer of María cookies at the bottom of your mold and around the mold for decoration, add a layer of mixture over each layer of María cookies and repeat until the mold is full.
  • Freeze in the refrigerator for 1.5 hours and then keep refrigerated.
