Tangerine and Yogurt Mousse

  • 1 cup granola, natural
  • 1 stick butter, (90 g)
  • 4 yogurt, Activia® papaya and cereal at room temperature. (113 g) at room temperature. (113 g)
  • 1/2 cups juice, tangerine
  • 2 envelopes unflavored gelatin powder, hydrated and melted (7 g each)
  • 1 cup whipped cream
  • 1 sprig peppermint
  • 1/4 cups mandarin orange, canned

  • Blend the granola until it becomes a fine powder. Combine with the butter and mix very well.
  • Form a crust with the granola in cupcake molds using a spoon.
  • For the mousse, mix the yogurt with the tangerine juice and the hydrated and melted gelatin. Set aside.
  • Using an electric mixer, beat the cream until soft peaks form. Gently fold in the yogurt mixture and combine.
  • Place some of the mixture into each mold and refrigerate until firm. Unmold.
  • Decorate with canned tangerine segments and mint leaves.
