Pumpkin Flan

Pumpkin is the name given to squash in many places in the Caribbean, where this vegetable is used to make not only savory dishes but also sweets like pumpkin cake and this delicious pumpkin flan, which is one of the most economical desserts; its flavor and texture will delight you.

  • 1/2 kilos zucchini , or ayuma
  • 5 eggs
  • 1 can condensed milk
  • 1 1/2 cups cow's milk
  • 2 teaspoons liquid vanilla
  • 1/2 cups water
  • 1 cup sugar
  • 3 tablespoons cornstarch

  • Preheat the oven to 250°C.
  • Boil the pumpkin without the skin until soft, then drain the water.
  • Blend the pumpkin with the milk, condensed milk, vanilla, cornstarch, and eggs.
  • In a baking dish, place the sugar and water until a caramel forms, and pour the pumpkin mixture into the baking dish.
  • Bake in a water bath for approximately 35 minutes.
  • Once ready, wait for it to cool and you can unmold it.
