Tiramisu Crepe Cake

  • 2 cups flour
  • 4 San Juan® eggs
  • 4 tablespoons instant coffee
  • 1/2 cups raw sugar
  • 2 tablespoons coffee liqueur
  • 1 1/2 cups cow's milk
  • 4 cups mascarpone cheese, for the cream
  • 1 cup icing sugar, for the cream
  • 1 teaspoon vanilla essence, for the cream
  • 1/4 cups cocoa
  • 2 cups ladyfingers, for decorating

  • For the crepes, in a bowl, mix the flour with the San Juan® Eggs, coffee, brown sugar, coffee liqueur, and milk until you have a smooth and homogenous mixture.
  • In a non-stick pan over medium heat, pour a ladle of the crepe mixture and spread it out, cooking each side for 2 minutes or until cooked.
  • For the cream, beat the mascarpone cheese with the powdered sugar and vanilla extract. Set aside.
  • For assembling, in a ring, place one crepe, spread a little cream, and repeat the process until all crepes are used, then remove the ring.
  • Cover the cake with the mascarpone cream and refrigerate for 1 hour.
  • Dust with cocoa and decorate with ladyfingers around. Cut and serve with a cup of coffee.
