Fruit Cocktail Icebox Cake

This fruit cocktail icebox cake is an easy and tasty no bake recipe! Feel free to use whatever fruits tickle your fancy, but for extra flavor use canned fruit—preserving fruit in syrup maintains and enhances the taste of fruit. This recipe is perfect for a summer party or anytime you just don't want to turn on your oven. If you are not crazy about nuts or chocolate, this is the right dessert for you!

  • 2 cups cream cheese
  • 1 cup table cream
  • 1 cup evaporated milk
  • 1 cup light condensed milk
  • 1 tablespoon lime juice
  • 1/2 cups syrup
  • 3 packages María cookies
  • 1 cup peach, canned
  • 1 cup strawberries
  • 1 cup pear, canned
  • 1 cup mango, canned
  • 1 cup mandarin orange, canned
  • 1 cup cherries, canned

  • In a blender, combine cheese cream, table cream, evaporated milk, condensed milk, lime juice, and fruit syrup. Blend until smooth and set aside.
  • On a serving platter, arrange rows of cookies in a rectangle. Spread cream mixture on top of the cookies. Arrange rows of peaches, strawberries, pears, mangoes, and cherries on top of the cream mixture. Repeat the layers twice until the serving platter is full. Refrigerate.
  • Garnish fruit cocktail icebox cake with peaches, strawberries, pears, tangerines, and cherries.
