This delicious and refreshing Lemon Mousse is easily prepared with a bit of gelatin that gives it its thick mousse texture, perfect to finish off a meal or family barbecue.

5 egg whites
1 cup sugar
6 teaspoons lemon juice
1 envelope unflavored gelatin powder, unflavored gelatin

Separate the egg whites from the yolks and beat the egg whites until stiff peaks form with a pinch of salt.
Gradually add the sugar until the mixture becomes stiff.
Dissolve the gelatin in a quarter cup of boiling water and add a quarter cup of cold water.
Add the lemon juice to the egg whites and then the gelatin, proceeding to whip quickly.
Place the mixture in the refrigerator for 15 minutes.
Remove the mixture and whip it again to prevent the lemon juice from separating from the egg whites.
Pour it into a greased mold and refrigerate for four hours or overnight.
Cover the mousse with custard.
